In an effort to distract myself from all that mess going on in the Gulf, I turn to (what else?) the kitchen -- and this week's Four Foods on Friday, brought to you by Valerie at Fun, Crafts and Recipes. Here are this week’s four questions. They’re about potatoes.
#1. Potato Chips. What kind of chips are your favorite?
My all time favorites are Zapp's Cajun Crawtator or Cajun Dill chips. Oh my, sooooo good.
#2. What’s your favorite thing to dip chips in?
Potato chips go in either a traditional onion dip, my homemade garlic dip, or some Borden Jalapeno Dip.
#3. What’s your favorite way to eat a baked potato?
I can eat 'em any way -- from loaded to the hilt to almost plain, with just a little salt or some salsa to moisten. I like to eat them stem to stern, skin and all, unless I don't know where that's been, so to speak.
#4. How do you make mashed potatoes?
I sometimes make the flakes on busy weeknights - those male people I live with don't know the difference... If I have the time and inclination, i get small Idahoes, cut them into about two-inch pieces, skin on, and let them boil with some toes of garlic until a fork goes through them. I then drain and mash the garlic and the potatoes together, add milk and butter, sometimes cheese and maybe a little sour cream for richness, maybe a few green onions. These don't even need gravy!
